Ingredients:

  • 1 cup sprouted beans (matki or moong)

  • 1/2 tsp turmeric powder

  • 1 tsp goda masala (a Maharashtrian spice mix)

  • 2 tbsp oil

  • Salt, to taste

  • 8 pav (Indian bread rolls)

  • Farsan, for garnish

  • Chopped onion, lemon, and coriander, for garnish

For the Tempering:

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • A pinch of asafoetida

  • 2 dried red chilies

Instructions:

  1. In a pressure cooker, add the sprouted beans and 2 cups of water. Cook for 2-3 whistles.

  2. In a pan, heat 2 tablespoons of oil. Add the chopped onion and sauté until translucent.

  3. Add the ginger-garlic paste and sauté for a few seconds.

  4. Add the chopped tomato and sauté until it becomes mushy.

  5. Add the red chili powder, turmeric powder, and goda masala. Mix well and sauté for a minute.

  6. Add the cooked sprouted beans and mix well. Add salt to taste.

  7. For the tempering, heat 2 tablespoons of oil in a small pan. Add the mustard seeds, cumin seeds, asafoetida, and dried red chilies.

  8. Once the seeds start to crackle, add the tempering to the misal curry.

  9. Toast the pav on a hot griddle or in a toaster.

  10. Assemble the sandwich by placing the toasted pav on a plate and spooning some of the misal curries on top.

  11. Garnish with farsan, chopped onion, lemon, and coriander.

  12. Serve hot and enjoy!
